OK. The Fourth of July wasn't good (pointswise)--at least parts of it! So today I am looking to use as few points as I can (to stay within my range.)
I got a soup inspiration that you may want to try. I had in the refrigerator a quantity of cooked, soft dilled zucchini and onions as well as some roasted potatoes. Here is the result:
The Day-After Soup
2-4 C soft 0-point vegetable
1 potato or equivalent of instant dry potatoes
1 can chicken broth
seasoning
1 onion, coarsely chopped
Spray a 2-3 quart saucepan. Place over medium high heat. Add onion and spray again.
When onion is slightly browned, add soft vegetable, potato, and broth. Cook until soup comes to a gentle boil. Lower heat and simmer briefly. Add any interesting spice mixture to taste.
Toppings: 2 T light sour cream (1 point)
parmesan cheese
Points will vary. As I prepared it with the zucchini and potato, there were 3-4 points for the whole soup! It's filling and flavorful.
